Dongding or Frozen Summit Mountain is found at the branch of Phoenix Mountain in Lugu Township, Nantou County of Taiwan. At an elevation of 800-1,200 meters above sea level, the mountain slopes are often covered in rain, being very cold and slippery. A legend tells that tea farmers had to go through an arduous journey with “frozen tiptoes” in order to ascend to the mountain top to harvest teas.
Donding Oolong (凍頂烏龍) usually comes in several styles such as light fragrance, heavy fragrance, and charcoal roasted . A number of production factors such as fermentation level, charcoal roasting time and temperature combined to make the difference.
For our Dongding Oolong, we chose a lightly oxidized profile and added a signature smoky flavour through heavy roasting, which gives a velvety mouthfeel that leaves one salivating and craving for more.
